How to make baingan ka bharta recipe step by step or Toasted Brinjal/Egg plant

Ingredients
- 1 tomato (medium size)
- 1 brinjal Big (tender and no seeded )
- ¼ cup green peas (I used frozen peas)
- 1 onion medium size (Roughly chopped)
- 1 clove of garlic (chopped)
- 1 green chili (chopped)
- 1 teaspoon cumin seed
- 1 tablespoon cooking oil (preferred mustard oil)
- 1 pinch Hing (Asafetida) ; this is optional
- Salt to taste
- a hand full of chopped Coriander leaves (for garnishing)
Method
- Apply little oil on the brinjal and roast it nicely and roast the tomato as well.
- Mash the brinjal roughly and chop the roasted tomato
- Heat the pan/kadhai/wok and put the cooking oil and hit it (if using mustard oil then heat until the smoke which will increase the test otherwise it will give the raw smell)
- Add cumin, mustard seeds and wait until to crackling sound
- Add chopped garlic, ginger and green chilies and sauté for 10 15 secs
- Add chopped onions and peas and sauté until onions become translucent (but keep little crunchy) & peas leave raw smell. (if using frozen peas then put these after 5-9 min of onion or you can defrost it for 1 min in microwave)
- Add 1 pinch hing ( Asafetida) for better test at this stage though it is optional
- Add chopped tomato and sauté for 2 -3 min and then add the mashed brinjal, salt and coriander leaves and sauté for 3-5 min in medium flame.
This can be served as main disc with Roti/chapati or
Naan with your favorite salad. Or can be served as side disc with your main
course
