Pineapple and Kardi Ambila | Bambo shot Soup

How to prepare Sambalpuri Ambila traditional Odiya recipe 


This Ambila or soup recipe is mostly beneficial on low carb diet, diabetics person can take weekly 3 times , stomach upset and seasonal cold and sneeze. It is easy and quick to to make and serve warm

Ingredients


  • Water : 4 cups ( preferred hot water)
  • Bambo shot or Kardi - 2 tbl spoons

Vegetables:

  • Carrot : 1/2 cups
  • Beans : 1/2 cups
  • Brinjal : 1/2 cups
  • Pine apple : 1/2 cups
  • Radish/ Turnip : 1/2 cups

For thickener and taste maker:

  • Curd/yogurt :2 tbl spoon
  • Rice powder : 1.5 tbl spoon
  • red chilli powder : 1 tea spoon
  • Salt : To taste
  • Turmeric : 1 tea spoon
Clay pot : medium size (optional, if you don't have then you can use the normal vessel)

For Tadka :

  • Cooking oil : 2 tbl spoon ( I preferred mustard oil)
  • Fenugreek seed : 1/2 tea spoon
  • Mustard seed : 1/2 tea spoon
  • cummins Seed : 1/2 tea spoon (Or you can use panch futon instead of above three ingredients; do you like to know what is panch photon ? comment below :) )
  • garlic : 1 tbl spoon (crushed)
  • green chilli : 1 crushed
  • red chilli : 1 small ( optional)
  • curry leaves : 5-6 leaves
  • Hing : 1/4 tea spoon
  • Coriander leaves chopped : a handful 


Method


  1. Take a vessel and boil the water. Add vegetables and stir once or twice .Cover the lid and wait until a boil. After a boil, add salt and turmeric and gently stir it ; wait until the vegetables to be cooked nearly 70% done. Stir occasionally .
  2. Mean while to make the thicker & taste maker follow he below steps :
  3.  take a cup or a small bowl and mix Curd/yogurt,Rice powder, red chilli properly and add the remaining water or whey water and keep aside.
  4. After the veggie cooked nearly 70% then add the thickener and stir for 10 to 20 seconds and leave this for a good boil around 5 more minutes. Add bamboo shot or  Kardi at this stage and mix well.
  5. Then the next step is to do a strong tadka ; keep following the below steps.
  6. take a sauce pan or kadhai and heat it. Add cooking oil and wait until the oil is in smoking point. Add the panch futana or the three ingredients (Fenugreek seed,Mustard seed, cummins Seed) together and wait until crackle. Immediately add red chilli , hing, curry leaves ,crushed garlic and green chilli and saute for 30 to 40 seconds ( until it will release a great aroma).
  7. The next important step is either add the tadka into the boiled Ambila or you can add the boiled ambila into the tadka and add the pineapple pieces and coriander leaves. Cook for another 40 to 50 seconds and serve with plain boil rice  or can take 1 bowl of Ambila and enjoy :)
