How to Choose the perfect dal for Dalma or Which dal is perfect for Dalma:

There are many types of dal available in market. But all of the dals are not suitable to make Dalma. You can take one of the below dal for this recipe.

  • Mung dal
  • Toor dal /Arhar dal 
  • Masoor dal

Ingredients :

  • Mung dal - 50 gms
  • Water - 600 ml 
  • Potato - 2 small size
  • Beans -  3 to 4 (cut into 1 inch length)
  • Pumpkin - 5 to 6 cubed pieces
  • Brinjal - 5 to 6 cubes pieces
  • Tomato - 1 small  chopped nicely
  • Turmeric powder - 1/4th tea spoon
  • Cummin seeds - 1 table spoon
  • Red chilli (dry) - 3 (medium size)
  • Ginger  - 1 tea spoon (crushed)
  • Salt - as per taste 
  • Ghee or Oil - 2 tbl spoon
  • Corriander leaves -  50 gms
  • Tej patta leave - 1 (optional)


Optional vegetables but good to have if available in your area

OR
  • Cauliflower - 3 to 4 florets


Method :

  1. In a pan dry roast dal for few minutes until the colour changes and give a nice aroma. wash it and keep aside. You can use raw all too but it used to be heavy to digest comparatively the roasted dal
  2. Roast half table spoon cummins seeds and 2  red chilli together for  few minutes or until it will give a nice aroma. wait for cool down and then make a rough powder :)
  3. In a pot add water and keep it until boil ;add ginger and tej leave at this stage
  4. Follow the sequence of putting the vegetables and dal in the boiling water. Brinjal, dal, potato, beans, pumpkin, Ganthi gobi or Kohlrrabi or Cauliflower 
  5. Add turmeric, salt and cover the lid
  6. Cook for 10 to 15 mins or until the vegetables are cooked 80 %. Don't overcook.


It's time  to do tadka :

  1. Take a small pan and heat it 
  2. Add ghee or oil and wait for 30 to 40 seconds , until the ghee or oil is hot. Add cummins seeds , red chilli. wait until it cracks
  3. Add the boiled vegetables (prepared in the stage -1 ) and mix everything together and keep on the stove for 20 seconds
Add chopped coriander and serve hot. You can serve this with rice or roti or can take this as a soup bowl.
